Ingredients

  • 2 slices whole-grain bread
  • 80 g avocado
  • 1 large egg
  • 5 g olive oil
  • to taste pinch salt
  • to taste pinch pepper
  • to taste pinch lemon zest

Instructions

Toast the whole-grain bread slices until they're golden brown. You can do this in a toaster on a medium setting or in a preheated oven at 180°C (350°F) for about 5 minutes.

While the bread is toasting, mash the avocado in a small bowl. Add a pinch of salt, pepper, and lemon zest to taste. Mix it well until the avocado is smooth and creamy.

Poach the egg by bringing a pot of water to a simmer. Crack the egg into a small bowl. Create a gentle whirlpool in the water using a spoon, then gently add the egg to the water. Cook for about 3-4 minutes until the egg white is set but the yolk is still runny. Remove the egg with a slotted spoon and let it drain on a paper towel.

Spread the mashed avocado generously over each slice of toasted bread.

Place the poached egg on top of the avocado spread on each toast.

Drizzle with a small amount of olive oil and add an additional pinch of salt, pepper, and lemon zest if desired.
