Preheat your oven to 400°F (200°C).
Peel the potatoes and cut them into quarters.
In a large bowl, combine 2 tablespoons of olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Add the chicken thighs and potato pieces to the bowl and toss until they are well coated with the olive oil and seasoning mixture.
Place the chicken and potatoes in a single layer on a baking sheet.
Drizzle the remaining tablespoon of olive oil over the chicken and potatoes.
Roast in the preheated oven for 50 minutes or until the chicken is fully cooked and the potatoes are tender, turning the potatoes once halfway through the cooking time.
Remove from the oven and let rest for 5 minutes before serving. Serve warm, garnished with extra rosemary or thyme if desired.
