Ingredients

  • 1 1/2 cup Arborio rice
  • 3 tablespoon Olive oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 4 cup Vegetable broth
  • 1/2 cup Dry white wine
  • 2 cup Mushrooms
  • 1/4 cup Fresh parsley
  • 1/4 cup Nutritional yeast
  • to taste - Salt
  • to taste - Black pepper

Instructions

Finely chop the onion and mince the garlic.

Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.

Slice the mushrooms. Add them to the pan and cook until they release their liquid and begin to brown, about 8 minutes.

Add the remaining tablespoon of olive oil and the Arborio rice into the pan. Stir for 2-3 minutes until the rice becomes lightly toasted.

Pour in the white wine and cook until it is mostly absorbed by the rice.

Slowly add the vegetable broth, one cup at a time, stirring frequently. Wait for each cup to be absorbed before adding the next. This should take about 18-20 minutes in total.

Stir in the nutritional yeast, and season with salt and black pepper to taste.

Once the rice is creamy and tender, remove from heat and stir in chopped fresh parsley.

Let it rest for a few minutes before serving the risotto warm.
