Toast the whole-grain bread slice until golden and crispy.
Cut the avocado in half, remove the pit, and scoop out 75g into a bowl. Mash it with a fork until smooth, then add a pinch of salt and pepper to taste.
Heat 1 tsp olive oil in a small skillet over medium heat. Cut the cherry tomatoes in half and add to the skillet, cooking for about 3-4 minutes until they're softened. Season with a pinch of salt and pepper.
Bring a small pot of water to a gentle simmer with a pinch of salt. Crack the egg into a small bowl and gently slide it into the simmering water. Poach it for about 3-4 minutes until the white is set but the yolk remains runny.
Spread the mashed avocado over the toasted bread evenly.
Arrange the cooked cherry tomatoes on top of the avocado spread.
Carefully remove the poached egg from the water with a slotted spoon, letting any excess water drip off. Place it on top of the tomatoes.
Sprinkle with extra salt and pepper to taste, and serve immediately.
