Cut the chicken breast into bite-sized cubes and season with salt, black pepper, and cayenne pepper. Set aside.
Chop the tomatoes, red bell pepper, and green bell pepper into small pieces.
Mince the garlic and finely chop the onion.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Add the chicken cubes to the skillet and sear until browned all over, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3 minutes.
Add the chopped tomatoes and both bell peppers to the skillet. Sauté for another 5 minutes until the vegetables start to soften.
Return the chicken to the skillet, stir to combine with the vegetables, and cook for another 10 minutes, or until the chicken is cooked through and the mixture is heated throughout.
Adjust the seasoning with more salt and pepper if needed. Sprinkle with fresh parsley before serving.
