Rinse the fresh spinach under cold water to clean it. Pat dry with paper towels and chop it roughly.
In a medium bowl, crack the eggs and whisk them together until well combined. Season with a pinch of salt and pepper.
Heat the olive oil in a non-stick skillet over medium heat. Once the oil is hot, add the chopped spinach and sauté for about 1-2 minutes, or until wilted.
Pour the whisked eggs over the sautéed spinach in the skillet. Let it cook undisturbed for about 2 minutes, allowing the edges to set.
Once the edges are set, sprinkle the feta cheese over one half of the omelette, allowing it to melt slightly.
Gently fold the omelette in half using a spatula, covering the feta cheese. Cook for another 1-2 minutes, until the eggs are fully cooked but still moist.
Slide the omelette onto a plate and serve hot. Optionally, garnish with additional salt and pepper to taste.
