Bring a large pot of water to a boil. Add a pinch of salt to the water.
Add the whole grain pasta to the boiling water. Cook according to package instructions until the pasta is al dente, about 8-10 minutes.
While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
Add the mixed vegetables (broccoli, bell pepper, carrot) to the skillet. Sauté for about 5-7 minutes until they are vibrant and tender-crisp.
Drain the cooked pasta and add it to the skillet with the sautéed vegetables.
Toss the pasta and vegetables together, ensuring the pasta is coated with the olive oil from the skillet.
Season the pasta and vegetables with salt and pepper to taste.
Sprinkle the grated parmesan cheese over the pasta. Toss everything together to combine and ensure the cheese is evenly distributed.
Serve the Pasta Primavera hot, with additional parmesan cheese on the side if desired.
