  • 1 cup Fresh or canned pineapple (drained)
  • 1/4 cup Sliced almonds
  • 2 tablespoons Honey (optional)

Instructions

Begin by preparing your ingredients. If using canned pineapple, open the can and drain the juice. If using fresh pineapple, slice and chop it into small, bite-sized pieces.

Toast the sliced almonds in a dry skillet over medium heat for 3-4 minutes, stirring frequently until they are lightly golden and fragrant. Remove from heat and set aside to cool.

In a large mixing bowl, add the low-fat cottage cheese.

Add the drained pineapple pieces to the bowl with the cottage cheese and gently mix until combined.

Drizzle the optional honey over the cottage cheese and pineapple mixture if you like a bit of added sweetness, and stir to incorporate.
