Crack the eggs into a bowl, season with a pinch of salt and pepper, and whisk until well combined and slightly frothy.
Heat the olive oil in a non-stick skillet over medium heat.
Add the fresh spinach to the skillet and sauté until wilted, about 2 minutes.
Pour the whisked eggs over the spinach in the skillet, gently stirring the edges with a spatula to allow uncooked eggs to flow to the edges.
Crumble the feta cheese evenly over the eggs in the skillet.
Continue to cook the omelette until the edges are fully set and the center is slightly soft, about 3-4 minutes.
Fold the omelette in half using a spatula and transfer to a serving plate.
Serve hot, garnished with extra freshly cracked pepper if desired.
