Spaghetti Carbonara

By Shona Bonewit

Total: 30 minutes
PastaItalianMain Course

Ingredients

  • 12 oz spaghetti
  • 6 slices bacon
  • 3 large eggs
  • 1 cup parmesan cheese
  • 1 tsp black pepper
  • to taste N/A salt
  • 1 tbsp olive oil

Instructions

1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.

2

While the spaghetti is cooking, cut the bacon slices into small pieces. Heat a large skillet over medium heat and add the olive oil. Add the bacon pieces and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

3

In a medium bowl, whisk together the eggs, grated parmesan cheese, and black pepper until well combined.

4

Once the spaghetti is cooked, reserve 1 cup of the pasta water and then drain the rest. Return the hot spaghetti to the pot.

5

Quickly add the egg and cheese mixture to the hot spaghetti, stirring vigorously to coat the pasta evenly, allowing the heat from the pasta to cook the eggs.

6

Add the crispy bacon to the pasta, tossing to combine. If needed, add a bit of the reserved pasta water to help create a creamy sauce.

7

Season with salt and additional black pepper to taste. Serve immediately.
