Ingredients

  • 1 head Cauliflower
  • 1 1/2 cups Cheddar Cheese
  • 1/4 cup Cream Cheese
  • 1/2 cup Milk
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon Garlic powder
  • 8 ounces Pasta (like elbow macaroni)

Instructions

Preheat your oven to 375°F (190°C).

Cut the cauliflower into small florets and steam until tender, about 8-10 minutes.

Cook the pasta according to package instructions, drain, and set aside.

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until it forms a paste.

Gradually whisk in the milk, ensuring there are no lumps. Cook and stir until the mixture thickens, about 3-4 minutes.

Stir in the cream cheese until completely melted and the sauce is smooth.

Add the cheddar cheese, salt, black pepper, paprika, and garlic powder. Stir until the cheese is fully melted and the sauce is smooth.

Combine the cooked pasta and cauliflower, and pour the cheese sauce over them. Mix well until everything is coated with the sauce.

Transfer the mixture to a baking dish and bake in the preheated oven for 15-20 minutes until the top is golden brown and bubbling.
