Cauliflower Mac and Cheese

By Thomas McCrary Jr.

Total: 40 minutes
VegetarianGluten-FreeSide DishMain Course

Ingredients

  • 1 head Cauliflower
  • 2 cups Cheddar Cheese
  • 1.5 cups Milk
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Instructions

1

Preheat the oven to 375°F (190°C). Cut the cauliflower into florets and steam them until they're tender, about 5-7 minutes.

2

In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute until it's smooth and has a slightly golden color.

3

Gradually whisk in the milk, ensuring no lumps form. Continue to whisk constantly until the sauce begins to thicken, about 4-5 minutes.

4

Stir in the cheddar cheese, salt, and pepper, and continue to whisk until the cheese is completely melted and the sauce is creamy and smooth.

5

Place the steamed cauliflower florets in a baking dish and drizzle with olive oil. Pour the cheese sauce over the cauliflower, ensuring the florets are well-covered.

6

Bake in the preheated oven for 15-20 minutes until the top is bubbly and golden brown.

7

Let it cool for a few minutes before serving. Enjoy as a side dish or a main course.
