Toast the 8 slices of whole-grain bread in a toaster until golden brown and crispy. Set aside.
Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
Mash the avocado using a fork. Add juice from half a lemon, 0.5 teaspoon salt, and 0.5 teaspoon black pepper. Mix well.
Fill a large saucepan halfway with water and bring it to a gentle simmer. Add a tablespoon of vinegar (optional) to help the eggs hold their shape.
Crack each egg into a small bowl, then gently slide them into the simmering water one at a time. Poach for 3-4 minutes for a runny yolk, or longer if you prefer a firmer yolk. Remove with a slotted spoon and drain on a paper towel.
Spread the mashed avocado evenly onto each slice of toasted bread.
Top each avocado-covered toast with a poached egg. Sprinkle a pinch of chili flakes over each egg for added flavor and heat.
Finish with a slight drizzle of olive oil over each toast for extra richness and serve immediately.
