Preheat the oven to 200°C (392°F).
Peel the sweet potatoes and cut them into 1-inch cubes.
In a bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.
Spread the sweet potatoes on a baking sheet lined with parchment paper and roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, turning halfway through.
While the potatoes are roasting, if using mince beef, shape into small kebabs or patties. If using skewered beef, ensure they are ready to grill.
Heat 1 tablespoon of olive oil in a grill pan or skillet over medium-high heat.
Cook the beef kebabs or skewers for about 4-5 minutes on each side until fully cooked through.
In a small bowl, mix the tahini, lemon juice, minced garlic (2 cloves), a pinch of salt, and a bit of water to achieve a dressing-like consistency.
To assemble, place a handful of arugula or mixed greens in each bowl.
Top with roasted sweet potatoes, cooked beef kebabs, and add pickled turnips to the side.
Drizzle the tahini dressing over the assembled bowl and serve immediately.
