Dice the onion and mince the garlic cloves.
In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 5 minutes.
Add the chili powder and cumin to the pot, stirring for 1 minute until spices are fragrant.
Add the mixed beans, corn kernels, and diced tomatoes to the pot. Stir to combine.
Add the cooked brown rice to the pot. Season with salt and black pepper to taste.
Stir everything together and let the mixture simmer for 20-25 minutes on low heat, stirring occasionally.
Serve hot, garnished with slices of avocado if desired.
