Preheat a grill pan over medium-high heat. Brush the polenta rounds lightly with olive oil and season with salt and pepper. Grill for about 2-3 minutes on each side until they have grill marks and are heated through.
Slice the fresh mozzarella into thin slices. If using 2 oz, divide evenly for each serving.
On a large serving plate, arrange the baby arugula as a bed.
Place the grilled polenta rounds on top of the arugula.
Slice the grilled chicken breast into thin slices and arrange them over the polenta and arugula.
Scatter the roasted cherry tomatoes over the dish.
Lay the slices of mozzarella on top of the chicken.
Tear the fresh basil leaves and sprinkle them over the mozzarella.
Drizzle the entire dish with 1 tablespoon of olive oil and 1 teaspoon of balsamic glaze. Add additional salt and pepper to taste.
Serve immediately while the polenta and chicken are warm, allowing the mozzarella to gently melt slightly over the top.
