Preheat the oven to 200°C (400°F).
Season the pork tenderloin with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Heat the olive oil in a pan over medium-high heat. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
Transfer the pork to an oven-safe dish and place it in the preheated oven. Roast for 15-18 minutes or until the internal temperature reaches 63°C (145°F).
While the pork is roasting, prepare the slaw by combining the julienned apple, shredded cabbage, apple cider vinegar, the remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper in a large bowl. Toss well to combine.
Let the pork rest for about 5 minutes after removing it from the oven.
Slice the pork tenderloin and serve it with the apple cabbage slaw.
