Preheat a pan over medium heat and add 1 tsp of olive oil.
Lightly toast the whole-grain bread slices in the pan until golden brown on both sides. Remove and set aside.
Season the thinly sliced roast pork tenderloin with salt and pepper.
Place the seasoned pork slices in the same pan and heat them gently for about 2-3 minutes, just until warmed through. Turn occasionally to avoid overcooking.
Arrange the toasted bread slices on a serving plate.
Place a leaf of lettuce on one slice of the toasted bread.
Evenly distribute the warmed pork tenderloin slices over the lettuce.
Top the pork with 1/2 cup of apple slaw, spreading it to cover the pork evenly.
Finish by placing the second slice of toasted bread on top. Cut the sandwich in half if desired and serve immediately.
