Bring a pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat.
Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant. Be careful not to burn the garlic.
Add the mixed vegetables to the skillet and sauté for 4-5 minutes until they are tender-crisp.
Once the vegetables are cooked, add the drained spaghetti to the skillet. Toss everything together until well combined.
Season with salt and pepper to taste. Toss again to ensure even distribution of seasoning.
Serve the pasta hot, topped with freshly grated Parmesan cheese as desired.
