Crack the 4 large eggs into a mixing bowl. Add a pinch of salt and pepper, then whisk until yolks and whites are fully combined and slightly frothy.
Rinse the fresh spinach and pat it dry with a clean towel. Roughly chop the spinach leaves.
Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
Add the chopped spinach to the skillet and sauté for 1-2 minutes or until wilted.
Pour the beaten eggs over the wilted spinach in the skillet. Use a spatula to gently stir and lift the edges, allowing uncooked egg to flow underneath.
When the eggs start to set but are still slightly runny on top, sprinkle 1/2 cup crumbled feta cheese over half of the omelette.
Fold the omelette in half to cover the feta cheese. Continue cooking for another minute or until the eggs are fully set and the cheese is warmed through.
Slide the omelette onto a plate, cut into halves or quarters, and serve immediately.
