Pat the pork chops dry with paper towels and season them with salt and pepper on both sides.
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the pork chops and sear them for about 4-5 minutes on each side until they are golden brown and cooked through. The internal temperature should reach 145°F (63°C). Remove the chops from the skillet and let them rest on a plate.
In the same skillet, add the remaining tablespoon of olive oil and the chopped onion. Sauté the onion over medium heat until it becomes translucent, about 3-4 minutes.
Minced the garlic and add it to the skillet with the onions. Cook for an additional 30 seconds until fragrant.
While the onion and garlic are cooking, peel and core the apples, then slice them into thin wedges.
Add the apple slices to the skillet with the onions and garlic. Sauté for about 5-7 minutes until the apples are tender and slightly caramelized. Season with a pinch of salt.
In a separate pot, bring water to a boil and add green beans. Boil for 3-4 minutes until they are bright green and tender-crisp. Drain and set aside.
Serve the pork chops topped with the apple sauce from the skillet, alongside the sautéed green beans.
