Prepare the workspace by setting out a large shallow dish filled with warm water for soaking the rice paper wrappers. Arrange all other ingredients within arm's reach for quick assembly.
Carefully dip one rice paper wrapper into the warm water for about 10-15 seconds, or until it softens. Lay it flat on a clean surface or a damp kitchen towel.
Place a small amount of sliced turkey breast, about 33 g, towards the bottom third of the rice paper. Top with a few slices of avocado, approximately 2-3 slices.
Add a small handful of cooked rice vermicelli, about 2 tablespoons. Then, add a small amount of shredded carrots, cucumber, and a sprinkle of fresh herbs (mint or cilantro). Make sure not to overfill.
Gently fold the bottom of the rice paper over the filling, then fold in the sides and roll tightly like a burrito. Set aside and repeat with the remaining rice paper wrappers.
Arrange the completed rolls on a serving plate. Serve with 2 tablespoons of peanut dipping sauce per person on the side.
