Add the chopped bell pepper and broccoli to the curry sauce. Cook for about 5-7 minutes, or until the vegetables are tender but still crisp.
Return the cooked chicken to the skillet, stirring to coat it in the sauce. Simmer for an additional 2-3 minutes to heat through and allow the flavors to meld.
Taste and adjust seasoning if necessary with salt and pepper. Serve the Thai chicken curry hot over the cooked rice.
