Spaghetti Aglio e Olio

By Nate Patrylak

Total: 20 minutes
ItalianVegetarianQuick & Easy

Ingredients

  • 100 g spaghetti
  • 2 cloves garlic cloves
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • 2 tbsp parsley
  • 1/2 tbsp salt
  • 1/8 tsp black pepper

Instructions

1

Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package instructions (usually 8-10 minutes).

2

While the spaghetti is cooking, mince the garlic cloves and chop the parsley finely.

3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes and sauté for about 2-3 minutes, until the garlic is golden and fragrant. Be careful not to burn the garlic.

4

Reserve about 1/4 cup of pasta water, then drain the spaghetti. Add the drained spaghetti directly to the skillet with the garlic and oil.

5

Toss the spaghetti in the oil until well coated, adding a little reserved pasta water to help create a silky sauce if necessary.

6

Remove the skillet from the heat, add the chopped parsley, and season with salt and black pepper to taste.

7

Serve immediately while hot, garnished with additional parsley if desired.
