Preheat your oven to 200°C (400°F).
Rinse the brown rice under cold water and place it in a small pot with 120 ml of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 30 minutes until the rice is cooked and water is absorbed.
Place the salmon fillet on a baking sheet lined with parchment paper. Rub 1 tablespoon of herb butter over the top of the salmon. Sprinkle with minced garlic, salt, and black pepper.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
While the salmon is baking, cut the broccoli into florets. Steam the broccoli either by using a steaming basket over boiling water or by placing them in a microwave-safe dish with a little water and microwave for about 3-4 minutes until tender.
Once the rice is cooked, fluff it with a fork and stir in the remaining tablespoon of herb butter and a pinch of salt, if desired.
Serve the baked salmon alongside the steamed broccoli and brown rice.
