Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
Cook the brown rice according to package instructions in salted water. Typically, this involves bringing 50 g of brown rice and 100 ml of water to a boil, then reducing the heat to low, covering, and simmering for about 30-35 minutes or until tender.
Prepare the garlic-herb butter by mincing 1 clove of garlic and chopping 1 tbsp of parsley. In a small bowl, mix the garlic and parsley with 1 tbsp of softened unsalted butter. Add a pinch of salt and pepper to taste, and set aside.
Place the salmon fillet on the prepared baking sheet. Drizzle with a small amount of olive oil and season with salt and pepper. Spread the garlic-herb butter over the top of the salmon fillet.
Slice 1/2 lemon into thin slices and place on top of the salmon. This will help infuse the salmon with lemon flavor as it bakes.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork. Avoid overcooking.
While the salmon is baking, steam the broccoli florets. Place them in a saucepan with a steamer basket over boiling water. Cover and steam for about 5-6 minutes, until they are tender-crisp.
Once everything is cooked, serve the salmon alongside the steamed broccoli and brown rice. Optionally, squeeze more lemon juice over the salmon and add additional salt and pepper to taste.
