  • 180 g Salmon fillet
  • 200 g Sweet potato
  • 100 g Broccoli
  • 1 tbsp Garlic-herb butter
  • 1 tsp Olive oil

Preheat your oven to 400°F (200°C).

Peel and dice the sweet potato into even bite-sized cubes. Drizzle with olive oil, sprinkle with salt and black pepper, and toss to coat evenly.

Spread the sweet potatoes evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, turning halfway through, until they're tender and slightly crispy on the edges.

Season the salmon fillet with salt and black pepper on both sides. Place it on a separate baking sheet lined with parchment paper.

Top the salmon fillet with the garlic-herb butter, spreading it evenly over the top.

Place the salmon in the oven during the last 12-15 minutes of the sweet potato roasting time. Bake until the salmon is cooked through and flakes easily with a fork.

While the salmon and sweet potatoes are baking, prepare the broccoli. Bring a pot of water to a boil, add a pinch of salt, and steam the broccoli over boiling water for about 4-5 minutes until bright green and tender.

Once everything is cooked, plate the salmon, roasted sweet potato, and steamed broccoli. Serve immediately while everything is warm.
