Total: 45 minutes
DinnerHealthySeafood

Ingredients

  • 150 g Salmon fillet
  • 50 g Brown rice
  • 120 g Broccoli
  • 30 g Herb butter
  • 2 cloves Garlic (minced)
  • 1 tbsp Olive oil
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 100 ml Water

Instructions

1

Preheat the oven to 180°C (350°F).

2

Rinse the brown rice under cold water. In a small pot, add 100 ml of water and a pinch of salt. Bring to a boil, then add the rice. Cover, reduce heat to low, and simmer for 25 minutes until cooked.

3

While the rice is cooking, place the salmon fillet on a baking sheet lined with parchment paper. Season with salt and black pepper to taste.

4

In a small bowl, mix the herb butter with minced garlic. Spread the garlic-herb butter mixture over the salmon fillet.

5

Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

6

Meanwhile, steam the broccoli. Add the broccoli to a steamer basket over a pot with a little water. Cover and steam for about 5-7 minutes until the broccoli is tender-crisp.

7

Once everything is cooked, plate the salmon, brown rice, and steamed broccoli. Drizzle a little olive oil over the broccoli if desired.
