Ingredients

  • 4 cups milk
  • 2 tablespoons butter
  • 1 cup rice
  • 2 tablespoons flour
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

Rinse the rice under cold water until the water runs clear to remove excess starch.

In a medium saucepan, bring 4 cups of milk to a gentle simmer over medium heat, stirring frequently to prevent it from burning.

Add the rinsed rice to the simmering milk, reduce heat to low, and cook, stirring occasionally, until the rice is tender and the mixture thickens (about 25-30 minutes).

In a small bowl, whisk together the flour and 1 cup of the hot milk mixture until smooth.

Stir the flour mixture back into the saucepan, mixing well to combine.

Add 2 tablespoons of butter, 1/2 cup of sugar, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt to the rice mixture. Stir well until everything is well incorporated.

Continue to cook on low heat for another 5-7 minutes until the pudding is creamy and thickened to your liking.

Remove from heat and let it cool slightly before serving. It will continue to thicken as it cools.

Serve warm or chilled. Optionally, garnish with a sprinkle of cinnamon on top before serving.
