Preheat a panini press or stovetop grill pan over medium heat.
If using ciabatta rolls, cut them in half. If using whole-grain bread, lay out the slices. Spread 1/2 tablespoon of pesto on each piece of bread.
Layer the turkey slices evenly over three of the bread pieces.
On top of the turkey, add sliced fresh mozzarella followed by thin slices of zucchini and tomato. Season with a pinch of salt and black pepper to taste.
Top with the other slice of bread or the top half of the ciabatta roll (with pesto side facing down).
Brush the outer sides of the bread with olive oil. Place the sandwich on the grill and press down. Grill each sandwich for about 3-5 minutes or until the bread is golden and the cheese is melted.
While the paninis are grilling, toss the mixed salad greens with lemon vinaigrette in a bowl. Season with salt and pepper to taste.
Once the paninis are ready, remove from the grill and let them rest for a minute before cutting each one in half.
Serve the paninis hot with the side salad.
