Preheat a grill pan over medium heat. Cut the zucchini into thin slices. Lightly brush the zucchini slices with olive oil and season with salt and pepper.
Grill the zucchini slices on the grill pan until both sides are browned and tender (about 3-4 minutes per side). Remove from the pan and set aside.
Slice the ciabatta rolls in half, if using, or lay out the slices of whole-grain bread.
Spread 1 tablespoon of pesto on the inside of each ciabatta roll or two slices of whole-grain bread.
Layer the turkey slices evenly on one side of the bread, followed by the grilled zucchini slices and sliced tomato. Add fresh mozzarella slices on top.
Close the sandwich with the other half of the ciabatta roll or bread slice.
Brush the outside of the sandwiches with a little olive oil.
Using the same grill pan, grill each sandwich for about 3-4 minutes per side, pressing down slightly with a spatula or grill press until the bread is crispy and the cheese has melted.
While the sandwiches are grilling, toss the mixed salad greens with the lemon vinaigrette in a large bowl.
Serve the warm sandwiches with the side salad.
