Prepare the sauce by combining soy sauce, rice vinegar, sugar (or maple syrup), and cornstarch in a small bowl. Set aside.
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium heat.
Add garlic and ginger to the skillet, and stir-fry for about 30 seconds until fragrant.
Add sliced eggplant to the skillet and stir-fry for about 5-7 minutes, until it starts to soften.
Add pan-fried tofu to the skillet, gently mixing it with the eggplant.
Pour the prepared sauce over the eggplant and tofu, stirring continuously until the sauce thickens and coats the vegetables and tofu. This should take about 2-3 minutes.
Meanwhile, bring a pot of water to boil and blanch the baby bok choy for about 2 minutes until they are just tender. Drain well.
Serve the Chinese-Style Braised Eggplant and Tofu over warm jasmine rice, and top with the blanched bok choy.
Garnish with sliced scallions before serving.
