A savory, restaurant-quality vegan scramble with firm tofu browned to a golden, slightly crisp texture, earthy sautéed mushrooms, wilted baby spinach and sweet bell pepper. Bright turmeric, umami-rich nutritional yeast and a ripe avocado-topped whole-grain toast make this a satisfying, protein-rich brunch that looks and tastes like it belongs on a café menu.
Press and crumble the tofu (why: removing excess water helps the tofu brown and absorb flavors). Wrap the 340 g block of firm tofu in a clean kitchen towel or several paper towels. Place it on a plate, top with a flat pan or a heavy bowl, and set a 2–3 lb (1–1.5 kg) weight on top (a canned goods stack works). Let it press for 10–15 minutes while you prep the vegetables. After pressing, open the tofu and use your hands or a fork to crumble it into bite-sized, uneven pieces — this texture mimics scrambled eggs.
