In a medium-sized bowl or jar, combine the rolled oats, milk, Greek yogurt, and chia seeds. Stir well to make sure the chia seeds are evenly distributed.
Add the natural peanut butter to the mixture. Stir it in thoroughly until well combined.
Peel and slice the banana. Add the banana slices to the mixture and gently fold them in.
If you prefer a sweeter taste, add the maple syrup and mix well.
Cover the bowl or jar with a lid or plastic wrap, and place it in the refrigerator overnight, or for at least 4-6 hours.
In the morning, remove the oats from the fridge. Give them a good stir and check the consistency. Add a splash more milk if they seem too thick.
Serve the overnight oats cold, garnished with extra banana slices or a drizzle of peanut butter, if desired. Enjoy your healthy and delicious breakfast!
