Ingredients

  • 180 g salmon fillets
  • 200 g sweet potatoes
  • 150 g broccoli
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 sliced lemon
  • 1 clove garlic

Instructions

Preheat your oven to 200 degrees Celsius (392 degrees Fahrenheit).

Peel the sweet potatoes and cut them into 1-inch cubes. Toss the cubes in a bowl with half a tablespoon of olive oil, salt, and black pepper.

Spread the sweet potato cubes on a baking sheet lined with parchment paper and roast for 25 minutes, or until they are tender and golden brown.

While the sweet potatoes are roasting, season the salmon fillet with salt, black pepper, and minced garlic. Drizzle with the remaining half tablespoon of olive oil.

Place the salmon fillet on another baking tray, skin side down, and top with lemon slices. Add this tray to the oven for the last 10-15 minutes of the sweet potato roasting time.

Meanwhile, bring a pot of water to boil. Add the broccoli florets and steam them for about 5-7 minutes until they are bright green and tender-crisp.

Once the sweet potatoes and salmon are done, remove them from the oven and let the salmon rest for a few minutes.

Serve the salmon with the roasted sweet potatoes and steamed broccoli on the side. Enjoy your healthy and delicious meal!
