Cut the chicken breast into small, bite-sized pieces.
Preheat the griddle to medium-high heat.
Melt 1 tablespoon of butter on the griddle, then add the chicken pieces. Season with a pinch of salt and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Remove the chicken from the griddle and set aside.
In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Reduce the griddle temperature to medium. Melt the remaining 1 tablespoon of butter on the griddle.
Pour the egg mixture onto the griddle, spreading it evenly. Cook for about 2-3 minutes or until the eggs start to set but are still slightly runny on top.
Sprinkle the cooked chicken and cheddar cheese evenly over one half of the omelette. Fold the other half over to cover the filling.
Let the omelette cook for another 2-3 minutes until the cheese is melted and the eggs are fully set. Serve hot.
