Ingredients

  • 2 pieces large eggs
  • 2 oz smoked salmon
  • 1 cup arugula
  • 4 pieces cherry tomatoes
  • 1 tsp olive oil or ghee
  • 1 piece lemon wedge
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

Crack the 2 eggs into a bowl. Add 1/4 tsp salt and 1/8 tsp black pepper, and whisk the eggs until they are well beaten and slightly frothy.

Heat 1 tsp of olive oil or ghee in a non-stick skillet over medium heat.

Once the oil is warm, add the whisked eggs to the skillet. Let them sit, without stirring, for about 20 seconds until they just begin to set.

Using a spatula, gently stir the eggs inwards to the center of the pan, forming soft curds. Continue to cook the eggs for another 1-2 minutes, stirring occasionally, until they are mostly cooked but still slightly runny.

Add the 2 oz of smoked salmon strips and 1 cup of arugula to the eggs. Gently fold them into the eggs and cook for an additional 1 minute until the arugula is slightly wilted.

Remove the skillet from heat. Top the scrambled eggs with the 4 halved cherry tomatoes.

Squeeze the juice of a lemon wedge over the top for a fresh zing.

Serve immediately while hot. Enjoy your quick breakfast delight!
