Ingredients

  • 50 g rolled oats
  • 1 egg large egg
  • 50 g avocado
  • 1 handful cherry tomatoes
  • 1 handful spinach
  • 1 tsp olive oil
  • to taste n/a salt
  • to taste n/a pepper
  • optional n/a chili flakes

Instructions

Start by cooking the oats. In a small saucepan, bring 200 ml of water to a boil. Add 50 g of rolled oats and a pinch of salt. Reduce the heat to low and simmer for 5-7 minutes, stirring occasionally, until the oats are creamy and cooked through.

While the oats are cooking, prepare the poached egg. Bring a pot of water to a gentle simmer and add a splash of vinegar (optional, helps the egg whites coagulate). Crack the egg into a small bowl then gently slide it into the simmering water. Poach for 3-4 minutes or until the white is set, but the yolk is still runny. Remove with a slotted spoon and set aside.

In a small frying pan, heat 1 tsp of olive oil over medium heat. Add the cherry tomatoes and sauté for 2 minutes until they start to soften, then add the spinach and a pinch of salt. Cook until the spinach is wilted, about 1-2 more minutes.

To assemble, place the cooked oatmeal in a serving bowl. Top with sautéed cherry tomatoes and spinach.

Add the sliced avocado over the top. Place the poached egg in the center.

Season with salt, pepper, and optional chili flakes to taste. Serve immediately while warm.
