In a small saucepan, bring 250 ml of water to a boil. Add a pinch of salt to enhance flavor.
Add the rolled oats to the boiling water. Reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until the oats are tender and have absorbed most of the water.
While the oats are cooking, heat 1 tsp of olive oil in a skillet over medium-high heat. Add the sliced mushrooms and a pinch of salt. Sauté for about 5 minutes or until they are golden and tender.
Add the baby spinach to the mushrooms in the skillet. Sauté for an additional 2 minutes, until the spinach has wilted.
Once the oats are cooked, season with salt and pepper to taste. Stir in the sautéed mushrooms and spinach, and then transfer the mixture to a serving bowl.
Poach the egg in simmering water with a splash of vinegar until the whites are set but the yolk is still runny, about 3 minutes.
Top the savory oatmeal with the poached egg and sprinkle with grated Parmesan. Season with additional salt and pepper if desired.
