  • 50 g rolled oats
  • 1 piece large egg
  • 50 g avocado
  • 1 handful cherry tomatoes
  • 1 handful spinach
  • 1 tsp olive oil
  • to taste N/A salt
  • to taste N/A pepper
  • to taste N/A chili flakes (optional)

Instructions

Begin by preparing the oatmeal: In a saucepan, combine 50 g of rolled oats with 200 ml of water and a pinch of salt. Bring to a boil, then reduce the heat and let it simmer for about 5-7 minutes, stirring occasionally until creamy.

Meanwhile, in a small pot of simmering water, poach the egg: Crack the egg into a small bowl, then gently slide it into the water. Cook for 3-4 minutes, until the egg white is set but the yolk remains runny. Remove with a slotted spoon and set aside.

In a small skillet, heat 1 tsp of olive oil over medium heat. Add the cherry tomatoes (halved) and a handful of spinach, sauté for 2-3 minutes, until the spinach is wilted and the tomatoes are slightly blistered. Season with a pinch of salt and pepper.

To assemble: Spoon the cooked oatmeal into a serving bowl. Top with the sautéed spinach and tomatoes, followed by the poached egg. Arrange the sliced avocado on the side.

Season the dish with extra salt, pepper, and chili flakes if desired. Serve immediately.
