Ingredients

  • 1/2 cup rolled oats
  • 1 cup water or vegetable stock
  • 1 whole poached egg
  • 1/4 whole avocado
  • 1 handful spinach
  • 10 g grated Parmesan
  • to taste n/a salt
  • to taste n/a black pepper
  • 1 tsp olive oil

Instructions

In a small saucepan, bring 1 cup of water or vegetable stock to a boil over medium heat.

Add 1/2 cup of rolled oats to the boiling liquid. Stir well and reduce the heat to low.

Let the oats simmer for about 5 minutes, stirring occasionally until they are cooked to your preferred consistency.

While the oats are cooking, heat 1 tsp of olive oil in a small skillet over medium heat. Add a handful of spinach and sauté until wilted, about 2 minutes. Season with a pinch of salt and pepper.

Once the oats are cooked, stir in the sautéed spinach and adjust seasoning with salt and pepper according to taste.

Transfer the oatmeal to a serving bowl. Top with the poached egg, sliced 1/4 avocado, and sprinkle with 10 g of grated Parmesan cheese.

Finish with a little more freshly cracked black pepper on top if desired. Serve immediately.
