Baked Salmon with Roasted Sweet Potato & Steamed Broccolini

Ingredients

  • 150 g salmon fillet
  • 250 g sweet potato
  • 100 g broccolini or broccoli
  • 1 tbsp olive oil

Instructions

Preheat the oven to 200°C (400°F).

Peel and cube the sweet potatoes into even-sized pieces. Place the cubes in a bowl.

Drizzle half of the olive oil over the sweet potatoes. Add a pinch of salt and pepper, and toss to coat evenly.

Spread the coated sweet potato cubes on a baking sheet lined with parchment paper. Roast in the oven for 25 minutes, or until tender and slightly crispy around the edges.

While the sweet potatoes are roasting, prepare the salmon fillet by brushing it with a little olive oil, salt, and pepper. Crush 2 cloves of garlic and sprinkle over the salmon.

Place the salmon on another sheet pan or baking dish. Place it in the oven during the last 12 minutes of the sweet potato roasting time.

In the last 5 minutes of cooking the salmon, prepare a pot of boiling salted water. Add the broccolini and let it steam for about 4-5 minutes until tender but still bright green.

Once everything is cooked, squeeze fresh lemon juice over the salmon and broccolini.

Plate the salmon, roasted sweet potatoes, and steamed broccolini together. Drizzle any remaining olive oil over the dish if desired. Serve immediately.
