Ingredients

  • 1 cup Arborio rice
  • 4 cups Vegetable broth
  • 1 cup Mushrooms
  • 1/2 unit Onion
  • 1/4 cup Parmesan cheese
  • 2 tbsp Olive oil

Instructions

In a saucepan, heat the vegetable broth over medium heat until it simmers. Keep it warm but not boiling during the cooking process.

In a separate large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

Add the sliced mushrooms to the skillet with the onion and cook for an additional 5-7 minutes until the mushrooms are soft and have released their juices.

Stir in the Arborio rice into the skillet with the mushrooms and onions, cooking for about 2 minutes until the rice is slightly translucent.

Begin adding the warm vegetable broth to the rice mixture, one ladle (approximately 1 cup) at a time. Stir continuously until the liquid is mostly absorbed before adding the next ladle of broth. This process will take around 18-20 minutes.

Once the rice is creamy and just al dente, remove the skillet from heat. Stir in the Parmesan cheese until melted and combined.

Taste and season with salt and pepper if necessary. Serve immediately while warm and enjoy your creamy Mushroom Risotto!
