Preheat your oven to 425°F (220°C).
Rinse the chicken thoroughly and pat it dry with paper towels.
In a small bowl, mix the olive oil, juice of one lemon, minced garlic, dried thyme, dried rosemary, salt, and pepper to make the herb mixture.
Rub the herb mixture all over the chicken, making sure to get some under the skin for extra flavor.
Cut the used lemon into quarters and place it inside the cavity of the chicken.
Place the chicken breast-side up on a roasting pan and insert it into the preheated oven.
Roast the chicken for 60 to 70 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (75°C).
Remove the chicken from the oven and let it rest for 10 minutes before carving.
