Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
Peel and cube the sweet potato into bite-sized pieces. Place them into a bowl.
Add 1/2 tablespoon of olive oil, salt, and pepper to the sweet potatoes, and toss to coat evenly.
Spread the sweet potato cubes on one half of the prepared baking tray in a single layer.
Place the broccoli florets in the same bowl, add the remaining 1/2 tablespoon of olive oil, salt, and pepper, and toss to coat.
Spread the broccoli on the other half of the tray beside the sweet potatoes.
Place the salmon fillet in the center of the tray. Drizzle with a little olive oil, squeeze some lemon juice over it, and season with salt and pepper.
Mince the garlic clove and sprinkle it over the salmon fillet.
Slice the lemon into wedges and place around the salmon and vegetables.
Roast in the preheated oven for about 25-30 minutes, or until the salmon is cooked through and the vegetables are tender.
Remove from the oven and let cool slightly before serving. Garnish with additional lemon wedges if desired.
