Ingredients

  • 5 oz salmon fillet
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 tbsp fresh herbs

Instructions

Preheat your oven to 400°F (200°C).

Peel and dice the sweet potato into 1-inch cubes.

In a bowl, toss the diced sweet potato with 1/2 tbsp olive oil, salt, and pepper. Spread them out on a baking sheet.

Bake the sweet potatoes in the preheated oven for 20 minutes or until tender and slightly crispy.

While the sweet potatoes are baking, season the salmon fillet with salt, pepper, and half of the lemon juice. Mince the garlic and spread over the salmon.

Once the sweet potatoes have baked for 15 minutes, add the salmon fillet to the baking sheet and bake for an additional 12-15 minutes or until the salmon is cooked through and flakes easily.

Meanwhile, steam the broccoli florets in a steamer or a pot with a steaming basket over boiling water for about 5-7 minutes until tender yet crisp.

Remove everything from the oven. Drizzle the remaining olive oil and lemon juice over the broccoli. Sprinkle fresh herbs over the salmon and broccoli.

Plate the salmon, roasted sweet potatoes, and steamed broccoli. Serve immediately while warm.
