  • 200 ml Coconut milk
  • 30 g Chia seeds
  • as desired to taste Stevia
  • 50 g Berries (mixed)
  • 1/2 teaspoon Vanilla extract
  • 1/8 teaspoon Salt

Instructions

In a medium-sized bowl, combine 200ml of coconut milk, 30g of chia seeds, a small pinch (1/8 teaspoon) of salt, 1/2 teaspoon of vanilla extract, and Stevia to taste.

Whisk all the ingredients together thoroughly to ensure the chia seeds are evenly distributed in the coconut milk.

Let the mixture sit for about 10 minutes and then whisk it again to prevent the chia seeds from clumping together as they start to gel.

Cover the bowl with plastic wrap or transfer the mixture into individual serving cups, then refrigerate for at least 2 hours or overnight to allow the chia seeds to fully expand and create a pudding-like texture.

Once the pudding is ready, give it a good stir and portion it into bowls if not already done.

Top the pudding with 50g of mixed berries. Adjust the amount as per your preference and add a little more Stevia if desired, just before serving.
