  • 3 tbsp chia seeds
  • 200 ml unsweetened coconut milk
  • 80 g mixed berries (strawberries/blueberries)
  • 15 g sliced almonds
  • 1/2 tsp vanilla extract (optional)
  • 1 to 2 tbsp honey or maple syrup (optional for sweetness)
  • 1 pinch salt
  • a few fresh mint leaves for garnish (optional)

Instructions

In a mixing bowl, combine the chia seeds, unsweetened coconut milk, vanilla extract (if using), and a pinch of salt. Stir well to mix the seeds evenly into the liquid.

Cover the bowl and refrigerate for at least 2 hours, or overnight, allowing the chia seeds to swell and absorb the liquid, forming a thick pudding-like consistency.

Before serving, give the chia pudding a quick stir to make sure there are no clumps.

Distribute the pudding into serving bowls or cups.

Top each serving with mixed berries and sprinkle with sliced almonds.
