  • 3 tbsp chia seeds
  • 200 ml unsweetened coconut milk
  • 80 g mixed berries (strawberries/blueberries)
  • 15 g sliced almonds
  • 0.5 tsp vanilla extract

Instructions

In a medium mixing bowl, combine the chia seeds and coconut milk. Stir well to ensure there are no clumps.

Add the vanilla extract to the chia seed mixture, if using, and stir again.

Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or overnight, until the mixture has thickened to a pudding-like consistency.

Once the pudding has set, give it a good stir to break up any clumps.

Divide the chia pudding into two serving bowls or glasses.

Top each portion with mixed berries and sprinkle the sliced almonds over the top.
