Coconut Chia Pudding with Berries & Almonds

By JLuke Morris

Total: 4 hours 10 minutes (includes chilling time)
BreakfastDessertVeganGluten-FreeDairy-Free

Ingredients

  • 3 tbsp chia seeds
  • 200 ml unsweetened coconut milk
  • 80 g mixed berries (strawberries, blueberries)
  • 15 g sliced almonds
  • 0.5 tsp vanilla extract (optional)
  • 1 tbsp honey or maple syrup (optional for sweetness)

Instructions

1

In a medium-sized bowl, combine the chia seeds and unsweetened coconut milk. Stir well to ensure the seeds are evenly distributed in the milk.

2

If you are using vanilla extract and honey or maple syrup for sweetness, add them to the mixture and stir until fully incorporated.

3

Cover the bowl with plastic wrap or a lid, and refrigerate for at least 4 hours or overnight for best results, allowing the chia seeds to absorb the liquid and become pudding-like in consistency.

4

Before serving, give the chia pudding a good stir. Spoon the pudding into serving bowls or glasses.

5

Top the chia pudding with mixed berries and a sprinkle of sliced almonds. Serve chilled and enjoy!
